Pacific Oysters have a mild brininess and has a salty, oceanic flavour profile with a plump, juicy texture. They are generally larger in size compared to the Sydney Rocks. Pair with a crisper champagne and let the fizziness and acidity cut through the creaminess of the oyster; or for a more tart and fruity flavour opt for the Sauvignon Blanc.
